Ingredients to make Lauki Ka Raita
Gourd – 250 grams
Curd – 2 cups
Green chili – 1
Cumin – 1/2 tsp
Asafoetida – 1 pinch
Desi ghee – 1 tsp
Green coriander – 1 tbsp
salt – as per taste

How to make Bottle Gourd Raita
To make bottle gourd raita, first wash the bottle gourd and peel it off and then cut it into small pieces. Now put water in a vessel and heat it, add gourd to it and boil it. It will take 8-10 minutes for the gourd to boil and become soft. After this, take out the gourd from the water and put it in a big bowl and mash it by pressing it with the help of a spoon.

After mashing the gourd well, take curd and whisk it well. After this add the whipped curd to the bottle gourd and mix. Now add finely chopped green chilies, green coriander and salt as per taste and mix it well. After this, put 1 teaspoon of desi ghee in a pan and heat it on medium flame. When the ghee becomes hot and melts, put cumin seeds in it and crackle.

After roasting cumin seeds for a few seconds, turn off the gas and mix asafoetida powder in it. Now add the tempering prepared from cumin and asafoetida to the raita and mix well.
